03/01/1999: Having the mind of a serial killer, I'll take a poke at this one

Metaphorically speaking Pitt dies from committing wrath-- his life is now destroyed compared to what it would have been had he let John Doe live.

Now you may claim that argument is weak... but it's actually kind of based on a small portion of YOUR argument.

You see, only FIVE people actually PHYSICALLY died, not SIX. You were making the assumption that John Doe's plans were to punish all of the sinners by mortal death.

But the SLOTH sinner did not die-- at least not within the time frame of the movie. HE MIGHT AS WELL HAVE BEEN DEAD, according to the doctor... which you could also very well argue in the case of Pitt's character at the end of the movie.

Perhaps the most appropriate ending for the movie would have been for Pitt's character to turn the gun on himself after shooting Doe, then there would be no questions of the manner you posed because the punishment of the WRATH sinner would most definitely be obvious, rather than metaphorical.
