Well, supposedly, the unicorn has many meanings. You remember the lieutenant who's always following Deckard. Well, first, he makes some kind of origami chicken. Then he makes a stick-man with a boner to tell Deckard to go on and screw Rachel. Then he makes the unicorn, cuz it represents Rachel as something pure, different from the other horses.
Or, because Deckard dreams of the unicorn, and the lieutenant makes an origami unicorn, means the lieutenant knows what Deckard is dreaming, because Deckard's a replicant. Besides, they'res plenty of stuff that tells us Deckard is a replicant.
