To answer your questions:
1. Leeloo had all of her memories because technically, she did have the information to recreate brain cells. When our lives first begin, we start out as a single cell, which then multiplies by mitosis to many more cells. Those cells in turn are triggered to specialize into different cells i.e. nervous tissue.
2. Leeloo ran away from the government lab and the cops because she didn't know who they were or what they wanted. If you recall, the last thing she remembered was being attacked aboard her ship and then crashing to the earth. After that, the next thing she knows, she is inside a glass cylinder. All she knows is that she is captured.
3. The ultimate evil was stoped before Leeloo existed in the same way. There has always been a fifth element. Whether or not it was the same being is never stated. Maybe Leeloo lives forever or maybe a new fifth element is born when the previous one dies.
4. In theory, it would take the ultimate evil an infinite amount of time to destroy all life in the universe because, according to recent evidence, the universe is indefinite. This, however, does not matter to the ultimate evil. It only cares about killing all life. How long it takes, or how many it kills doesn't matter. It only seeks to kill. The reason it needed Zorg's help to get the stones was because it was light years away and couldn't do it itself. It did, however, know that the stones along with the fifth element were very dangerous and could kill it.
5. You didn't really want an answer to this one, so I'll go on.
6. Zorg wants to help the ultimate evil because he believed that some chaos would be benificial. He obviously didn't know that everything would be killed because it would mean the end to him as well. His greed along with his fear of the ultimate evil blinded the truth from him enough for him to help.
