It's true that there is always an even larger prime number. In fact, mathematicians already know what the next one is. They simply take all the known primes and muliply them together and add one to that product - and there you have it, another prime. They repeat this process to get even more primes, etc.
Of course, all this multiplying of 60+ million digit numbers takes a while and thus, the finding of new primes are rare enough to pass off as "news".
