Splatter films are alright, but I recommend that you go to the extreme end of the genre, and look for movies such as "Man behind the sun" or "Cannibal Holocaust". These may not be for your typical audience, but if you are looking for lots of blood and guts, you can't go wrong.
Typical american gore films tend to focus too much on removing the humanity from the horror, so that anything can be taken lightly. Friday the 13th movies are a prime example of this. Watching Jason take people apart with chainsaws, hegde clippers, etc... is made OK by the fact that it is simply ludicrous. When you go to the overseas market, rarelly is an attempt made to make it seem make- believe. The monsters are typically humans (although admitedly sick one) and they are doing terrible, yet possible things.
Also, looking for foreign horror films will give you and interesting idea of how other cultures create terror, as opposed to your own.
