I really don't know the names of any specific dishes, but she is a whiz at cooking rice and chicken things... she also specialized in pescado dishes... she came from a sea side village just south of the border w/ Ecuador... Piata, maybe??? It was a place w/ good surf, which is how she ended up here in Nor Cal... married an California surfer.
there are a lot of Mexican and South American people around here, and it never ceases to amaze me what great food the women can come up with using very inexpensive ingredients... I used to use a old Mexican lady as my translator for a job I had working w/ low income immigrant families, and she could take stuff that Gringas would throw out, fruit and veggies that the local market would give away, and make deee-licious meals out of it... she was actually an Indian from Oaxaca... about 4' 10" tall, no teeth, and kind and gentle as can be.
