For what it's worth by way of explanation, I use the term "redneck" basically as an all-purpose term for "mindless macho sheep who think that all movies that don't have lots of violence, explosions and nudity just suck". Since this is a fairly lengthy description, I find it easier to refer to the term "redneck". I don't use it to imply that something appeals only to white people; I use it to imply that something appeals only to _stupid_ people.
For a good example of this, cf: THEUNKNOWNWARRIOR's response. But then, you already did. I feel that says so much more than I ever could about the majority of the people who seem to worship this film.
